The 'Xiang Cuisine' from Hunan province is little known in the West, but it is one of the eight great culinary traditions of China and has
over 2,000 years of history.
Hunan cuisine, from southern China, is known for its
bold spicy flavor. Characterized by the abundant use of chili peppers, this regional cuisine stands out for its diverse cooking techniques, ranging from
stir-frying to
smoking and fermenting. The warm and humid climate of Hunan has deeply influenced the local gastronomy, as according to traditional Chinese medicine, consuming spicy food helps balance the body by eliminating internal moisture. Chilies, by inducing sweating, help regulate heat and humidity, which explains why spiciness is a fundamental part of the diet in this region.
At Chila, we serve dishes as authentic as those eaten by the people of Hunan, and to do so, we have brought the best chefs from Hunan to Spain. We also offer a wide variety of
vegan and gluten-free dishes.
